Ingredients for Crispy Thai Chicken Salad
- 2 cups cooked chicken breasts or thighs, shredded
- Salt, pepper, garlic, onion powder (to taste)
- 1-2 large shallots, thinly sliced
- 2 bulbs scallions, sliced diagonally
- 1 granny smith apple, sliced into matchsticks
- Chopped tomatoes (optional)
- 3 small garlic cloves, finely chopped
- 1 hot pepper, seeds removed, finely chopped
- 4 tbsp coconut aminos
- 1.5 tbsp hot sauce
- 4 drops Lime Oil
- 1 drop Black Pepper Oil
- 2 tbsp or more pineapple juice
- 2 tsp red pepper hot sauce
Step 1
Slice shallots into thin stripps and soak in ice water.Step 2
Shred and season chicken. Heat a skillet with cooking fat, then fry strips until both sides are golden and crispy.Step 3
Warm dressing ingredients in saucepan over medium heat for two minutes. Cool before using.Step 4
Drain shallots and mix with sliced apple, scallions, tomatoes, and crispy chicken. Drizzle dressing over salad just before serving.Nutritional Insights
