Lemon Olive Oil Muffins Recipe
Ingredients
- 3/4 cup tigernut flour
- 1/2 cup cassava flour
- 3 tablespoons maple sugar
- 1/2 teaspoon sea salt
- 3/4 teaspoon baking soda
- 1.5 teaspoons gelatin
- 1/4 cup olive oil
- 1/2 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract
- 1/2 cup milk
- 2 tablespoons lemon juice
- 8 drops Lemon Oil
Instructions
Step 1
Preheat oven to 375°F and line muffin pan.
Step 2
In a large bowl, combine tigernut flour, cassava flour, maple sugar, sea salt, baking soda, and gelatin.
Step 3
Create a well in the center. Add olive oil, applesauce, vanilla, milk, and lemon juice. Mix until blended.
Step 4
Gently fold in the Lemon Oil until well incorporated.
Step 5
Evenly pour batter into 6 muffin tins.
Step 6
Bake on middle rack for 20 minutes. Use the toothpick test.
