Fluffy Apple Cinnamon Pancakes

Ingredients:

  • 6 bananas
  • 7 eggs
  • 2/3 cup arrowroot powder
  • 1/4 cup casava flour
  • 1/2 tsp baking soda
  • 3 drops Cinnamon Oil
  • 1/4 tsp salt
  • 2 whole apples diced
  • 3 tbsp olive oil – for skillet
  • maple syrup for topping

Crafting Fluffy Apple Cinnamon Pancakes

  1. Place peeled bananas in the blender or food processor and pulse.
  2. Add eggs, arrowroot, casava flour, baking soda, cinnamon oil, and salt to the blender and blend until smooth.
  3. Dice apples and set aside.
  4. Remove blade from blender or food processor. Add in 1/2 the apples. Stir.
  5. On a pre-heated medium heat skillet add 1/2 tbsp of olive oil.
  6. Using a dry 1/4 measuring cup, scoop the batter into circles onto the skillet.
  7. After the bottoms of the pancakes begin to brown (you may notice a bubble or sides begin to form) flip the pancakes.
  8. Continue process until all the batter is cooked.
  9. Top cooked pancakes with remaining diced apple, followed by pure maple syrup .
